Brunch Bread

Ingredients:

  • 1 ½ cups nonfat milk
  • 1 tbs. vinegar or lemon juice
  • 1 ½ cups all-purpose flour
  • 1 tsp. baking powder
  • ½ cup brown sugar
  • ¾ cup 100% Bran cereal
  • ¾ cup rolled oats
  • ½ cup raisins
  • ½ cup finely chopped walnuts

Directions:

  1. Preheat oven to 375 degrees.
  2. Line a 9” loaf pan with waxed paper.
  3. In a small bowl, combine milk with vinegar and set aside 2 to 3 minutes to sour.
  4. In a large bowl, mix flour, baking powder, soda, sugar and cereals.
  5. Stir in soured milk; add raisins and nuts.
  6. Pour into pan and bake 45 mintues to one hour.
  7. Bread is done when a toothpick inserted into center comes out clean.
  8. Cool in pan 10 minutes.
  9. Finish cooling on a wire rack.
